Sausage Stuffed Zucchini


Today's recipe is one that your grandma would do when you were a little kid but you would make ugly faces to it because kids always expect for something more like french fries and pizza. But now that you are a grown up and is an adventure hunter in the kitchen, you will make this sausage stuffed zucchini and you will LOVE it.

Seriously this is the best zucchini recipe ever (ok the parmigiana zucchini is still in first place but this one gets second place!).

Now let's go to the kitchen and let's make some delicious zucchini!





Ingredients:
2 Zucchinis
4 Spicy Italian sausage, removed from casing
1 chopped onion
1 chopped garlic glove
1 Red chilli pepper, chopped really small and with no seeds
How much you like of parsley
Olive oil
Water to boil the zucchini
Black pepper
Salt
Parmesan cheese

Instructions:
Start boiling the water for the zucchini. While the water is heating  up, you can cut both zucchinis in a half (now you will have 4 half pieces). With a spoon take out the zucchini filling and reserve. Preheat the oven on 350ยบ F.

Now with your 4 empty half zucchinis put it to boil for only 1 minute, I know it looks like not enough time to boil it but trust me, if you boil more then 1 minute it will get too soft and will break apart.

While the zucchini is taking a little scare in the hot water, golden the chopped onion in a large pan with olive oil. Then add the sausage (remember to open up the sausages off their cases to get it looking more like a ground meat) and cook it till it get golden and well cooked.

Don't forget the take the zucchini out the boiling water!


When the sausage start to get golden, put the chopped parsley and the chopped garlic e mix it up. Then add the zucchini filling that you took it out before, add some salt, black pepper, and the chopped chilli, to finish it up add a good hand of sheered parmesan cheese. Mix everything well and let it cook for a couple of minutes.

When you finish the sausage mixture, put the zucchini shell in a pan and with a spoon fill it up with the sausage mixture, you can give a touch with some more parmesan cheese on the top and then put it to bake for 30 minutes or till it get golden.


There you! Enjoy the most delicious zucchini you will ever have! (after parmigiana zucchini of course).
