Berry Awesome Cake


Today I’m going to post another recipe from Jamie Oliver that is my favorite chef ever (so be aware that more of his recipes will appear here). This is a healthy, light and delicious cake that is really fast to make with some kind of fresh berries.

I really enjoy to have it with a little ice cream, you will see that the blueberry cake + ice cream is the best combination ever.

Get ready to fall in love with this cake!

Ingredients:
Butter and flour to preparer the cake pan
4 eggs
1 ½ of brown sugar
1 cup of melted butter with no salt (make sure to melt it first so isn’t hot when you to use it)
½ cup of olive oil
½ cup of milk
1 tea spoon of vanilla extract
3 ½ cups of whole-wheat flour
2 tea spoon of baking powder
a pinch of salt
zest of 2 lemons
zest de 2 oranges
4 cups of a mix of berries (I used blueberries, raspberries, blackberries)


Instructions:
In the mixer bow, beat the eggs with the sugar for about 3 minutes or till you get a light yellow. Once you get the eggs ready, add the melted butter, olive oil, milk and vanilla extract. Mix everything and while the mixer is working, slowly add the flour, baking powder and just a little of salt. Finish it up adding the zest of orange and lemon. Once it’s all well mixed let the rest a little in the bowl while you prepare the baking pan with butter and a little bit of flour (so the cake doesn’t stick in the bottom) and pre heat the oven at 375ºF.



Now add ¼ of the berries that you will use for the cake to the mixture and lightly mix it with a wooden spoon. Then put the mixture in the cake pan and put it in the oven to bake. After 15 minutes in the oven, take the cake out and add the rest of the berries over it, pressing lightly the berries against the mixture. Put the cake back inside the oven for more 30 or 40 minutes or until the top of the cake get golden.

There you go! The best non-chocolate-cake ever!
