Delicious Boiled Lemon Potatoes


Did you know that lemon and potatoes goes well as a sunny day and a cold drink? This was something I learned when I made this recipe from Jamie Oliver of boil potatoes. It is very simple to do and incredible delicious and it goes just perfect with a steak.

I change the recipe a little bit from the original that you can find on his website, so this is my version of it. Oh and in the photos doesn't show but try to finalize these potatoes with some mozzarella cheese in little pieces over it, it is just perfection!

Now let's go check how potatoes and lemons are best friends! 

Ingredients:
1lb (405g) Baby potatoes
2 table spoon of olive oil
2 table spoon of lemon juice
2 table spoon of heavy cream
Some scallion fine chopped
Salt
Black pepper
1/2 chili pepper
Water to boil the potatoes
Mozzarella cheese pieces for decoration.


Instructions:
Chop the potatoes in half and put it to boil the potatoes in water with salt. In case you are using regular potatoes and not small ones, chop them into medium sizes that way it won't take so long to boil it. Boil it for about 10 minutes or until you get it soft but not too much, you want boil potato and not mashed.

While the potatoes are boiling, lets prepare the sauce that will go with it. In a bowl, add the olive oil, lemon juice, heavy cream, chili pepper chopped really small and with no seeds, chopped scallions, salt and black pepper. Mix it well and taste it to see if it needs more salt or pepper.





When you finish boiling the potatoes, take it out the water and put it in a large bowl or big plate, and add the lemon mixture to it. The secret here is to add the sauce while the potatoes are still hot, so it will absolve the taste better. Then add some pieces of mozzarella cheese over it for decoration and voila! Deliciousness!
