Rosted Squash with Potatoes
One of these days I had a mini calabaza squash at home and I wanted to make something with it. It was the first time ever I cooked this kind of squash and I gotta say it tasted delicious. It is not easy to find this kind of squash around in NY state ( at least not where I leave), but this recipe goes really well with butternut squash too if you want to substitute it.
This squash recipe goes really well with the roasted beef recipe I posted before, or if you feel like going vegetarian just have the squash as an appetizer as it is good by it self.
Ingredients:
1 mini calabaza squash (or one small butternut squash)
2 golden potatoes
1 chili pepper (no seeds and chopped small)
3 gloves of garlic
Olive oil
Cumin
Thyme
Dry basil
Salt
Black pepper
Parmesan cheese
Instructions:
Pre-heat the oven at 350ºF. Chop the squash and potatoes into medium cubes, and then chop the chili pepper into small pieces taking out the seeds. Add the potatoes and squash and chili pepper into a wide pan, then add a good amount of olive oil, salt, black pepper, the gloves of garlic (without the skin), a little thyme, cumin and basil. Shake everything well so it season well the squash and potatoes.
Then put it to roast for around 15 minutes, then take it out, give it a little shake so the squash and potatoes don't stick to the pan, add some parmesan cheese over it and get it back to the oven for more 20 minutes or until the squash feels soft inside. Depending on your oven it can take a little longer for the squash feel soft.

Carrot Salad
Feeling like having something healthy today? This is a good recipe for a healthy salad that goes really well aside of a delicious chicken recipe or a good barbecue ribs. It is super easy and fast recipe with mainly carrots, which makes it cheap and at the same time delicious. Try it out!
Ingredients:
2 medium carrots
Fresh basil
Fresh scallion
Olive oil
Salt
Black pepper
1 table spoon of lemon juice
Fresh mozzarella
Instructions:
Peel the carrots and then shred it - not too small, I used the medium size on my shredder. Put the shredded carrot in a bowl, then chop the basil and scallions and add it to the bowl. Now it's time to season it with the lemon juice, olive oil, salt, black pepper. Mix everything really well.
To finish add some fresh mozzarella pieces over it! Now enjoy it!

Healthy Lemon Dressing for your Salad
Today's recipe is for those who feel light and healthy. It is an awesome recipe for those who like to season their salad with lemon juice but don't know how to measure the amount of lemon and then the dressing or get too lemony strong (urgh!) or too light. With this recipe you will learn how to balance it and the best part is that you won't need to buy those dressing in the bottle, since this one is SO fast and with ingredients that you will always find in your kitchen. =]
Ingredients:
1 lemon juice and a little of zest
6 table spoon of olive oil
Salt
Black pepper
1/2 chili pepper with no seeds chopped really small (you can use powder if that's what you have, it's only to give a little spiciness)

Mustard Dressing for Salads
I believe that for a good salad all you need is a good dressing. It doesn't matter if you get the best ingredients in the world, if the dressing is bad, it will ruin the whole salad. So, thinking about this, i decided to give to you guys this recipe for a delicious dressing made with mustard, that way you can vary a little bit more then the basic vinegar + olive oil. You have in your kitchen a lot of possibilities for great dressings, all that is stopping you is only your creativity! So let's work!
Usually when I make the dressing for my salads I don't have exact quantities for the ingredients, it varies according to the quantity of salad I have or the taste I have on that day, so even that I put the quantity here please keep tasting your dressing while seasoning it to make sure it is according to your taste.
Ingredients:
Salt
Black pepper
Olive oil
Vinegar
1 table spoon of dijon mustard (in case you don't have the dijon option, you can use the regular mustard with honey and a pinch of mayonnaise)
1 garlic glove chopped really small

Mediterranean Salad in Pita Bread
This is a delicious salad recipe that I learned
from the grand master Jamie Oliver, you guys will love it. This
is one of my favorites salads and I'm pretty sure you will be able to enjoy it
as well. But in this case, because I was hungrier then a salad can take care
of, I transformed it into a kind of sandwich with a pita bread (feel free to
use a different kind of bread, but try to use one that is hard enough that
won’t get soak with the salad dressing).

Ingredients:
4 leafs of lettuce (make sure to not have too much
lettuce in your salad)
1 big tomato
A handful of cherry tomatoes
1/2 cucumber
1/2 purple onion
½ Red chili pepper with no seed
2 table spoon of cottage cheese
3 black olives with no seed
Basil
Black pepper
Salt
Olive oil
Balsamic vinegar
One pita bread
